GF Protein Heavy Muffin Top Cookies

There is no denying the best part of a muffin is the top. So why not make ONLY muffin tops? This happened to me by accident if we’re being honest. I wanted to try out a friend’s muffin recipe so I got all the ingredients together, mixed the batter & as I was about ready to plop a spoonful in each muffin mold I realized there was no muffin tin in the house. Whoopsie! Times are tough nowadays. I didn’t want the batter to go to waste so I just used what I had (a baking pan) & acted as if the muffin batter was cookie dough. They baked for 15ish minutes & came out delish. This had me thinking what if I could make protein dense baked goods that still tasted amazing with the texture of a muffin top? Hence this entire blog post & recipe below! (Just a quick edit, the cookies come out soft because they’re GF so when you check to see if they’re fully baked keep that in mind.)

Ingredients (this makes about 25 cookies):

Put It All Together:

  1. Preheat oven to 350

  2. Mix almond flour + baking soda + xanthan gum + protein powder + eggs (I use a kitchen aid mixer, but if you’re not mix everything realllllllly well).

  3. Add in banana + palm sugar + vanilla + milk. Mix well.

  4. Sprinkle in cinnamon + cardamom + walnuts + chocolate chips + blueberries.

  5. Squeeze fresh lemon juice.

  6. Use a spoon to scoop the batter onto a baking sheet a few inches apart from one another.

  7. Bake for 13-15 minutes (depends how well-done you want them).

  8. Let cool & enjoy within 5-7 days.

Ahhh so you’re here because you wanna know how nutritious these protein heavy cookies really are. I totally understand — I’m the same way! These are all approximate by the way because if you make 12 huge cookies obviously the numbers aren’t going to be the same as my 24 medium-sized ones.
